“Comparing Calvados in a tasting is a fascinating exercise: each spirit when in contact with the air delivers a sequence of aromas and unveils its personality, as a testimony of each estate’s know-how.
Following a number of discussions and tastings, it has become quite obvious for each of us that we had to enhance the individual typicity of our productions. The apple varieties, the kind of orchards used, the age of the cider distilled, or the ageing process (mainly the size, age and origin of the casks used) are just as many elements on which the character of our Calvados is built. What signs and identifies our bottles is the balance between traditions inherited from older generations and the eagerness each of us shows to own our own style.
